A single lemon wedge can change your drink in ways you never see coming. It looks fresh. It feels harmless. It quietly picks up whatever may have been left behind on hands, knives, cutting boards, and countertops. Studies have found bacteria on restaurant lemon slices, not because lemons themselves are dangerous, but because those bright little wedges are handled repeatedly and served raw. Most people never experience any problem. But for some, that tiny garnish can become an unnecessary risk.

That innocent lemon wedge floating in your ice water is often one of the few parts of a restaurant meal that never goes through a cooking step. It moves from delivery crates to storage, from cutting boards to knives, from containers to hands, and eventually into your glass. Every point along the way creates another opportunity for unwanted microbes to hitch a ride.

Research has repeatedly found bacteria on restaurant-prepared lemon slices. The issue isn’t that lemons are inherently unsafe. It’s the handling. They are sliced in advance, touched frequently, stored, transported, and served without another heat-treatment step that would reduce many microorganisms.

That doesn’t mean every glass of lemon water is dangerous.

Most restaurants follow food-safety practices, and countless people enjoy lemon water every day without getting sick. Still, if you’re uncomfortable with not knowing exactly how that garnish was washed, cut, stored, or handled, there’s an incredibly simple option:

**Just ask for no lemon.**

It costs nothing, changes almost nothing about your meal, and removes one potential source of contamination.

At home, you have far more control. Rinse the lemon thoroughly under running water, use clean utensils and a clean cutting surface, wash your hands before preparation, and serve it in a clean glass.

You can still have the refreshing taste.

You just get to control what goes into the glass.
