Understanding which foods carry higher risks—and how to prepare them safely—can help reduce the chances of illness.

When discussing healthy eating, nutrition usually takes center stage. People carefully read ingredient labels, count nutrients, and choose fresh ingredients, yet food safety is just as important. Parasites are living organisms that can infect humans through contaminated food or water. Unlike bacteria, some parasites have complex life cycles and may survive if foods are not properly cooked, frozen when appropriate, or handled hygienically. Fortunately, following recommended food safety practices greatly lowers the risk of infection.

One of the best-known foods associated with parasitic risk is raw fish served as sashimi or sushi. While these dishes are enjoyed worldwide, the safety of raw seafood depends heavily on proper sourcing and preparation. Certain fish may carry parasites such as anisakis worms if they have not been appropriately frozen or handled according to food safety regulations. Reputable restaurants and suppliers follow strict guidelines, including freezing fish intended for raw consumption, to significantly reduce this risk. Purchasing raw seafood from trusted businesses is one of the safest ways to enjoy these dishes.

Frog meat is another food that requires careful preparation. Although it is considered a delicacy in some cuisines, consuming it raw or undercooked may expose people to parasites or other pathogens. Thorough cooking to the recommended internal temperature is essential to destroy harmful organisms. Buying frog meat from licensed suppliers and ensuring it is fully cooked before eating are important safety measures.

Snails can also carry parasites if they are not prepared correctly. Before cooking, they should be cleaned thoroughly, and they must be cooked completely to a safe temperature. Proper preparation is especially important for dishes made with wild or freshly harvested snails. Following established cooking methods greatly reduces the risk of foodborne illness.

Water chestnuts are often associated with healthy meals because of their crisp texture and mild flavor. However, fresh water chestnuts grown in aquatic environments can occasionally become contaminated with parasites in areas where sanitation is poor. Washing, peeling, and thoroughly cooking fresh water chestnuts before eating helps reduce this risk. Commercially processed water chestnuts sold in cans are generally considered safe because they have already undergone processing designed to eliminate harmful organisms.

It’s worth remembering that these foods are not inherently dangerous. Millions of people eat them safely every year because they are produced, handled, and prepared according to modern food safety standards. Problems are far more likely to occur when foods come from unreliable sources, are improperly stored, or are consumed raw when cooking is recommended.

General food safety practices remain the best defense against foodborne parasites. Wash fresh produce thoroughly, avoid cross-contamination between raw and cooked foods, cook meat and seafood to safe temperatures, and purchase products from reputable retailers and restaurants that follow proper hygiene standards.

If someone develops persistent digestive symptoms, fever, unexplained weight loss, or other concerning signs after eating high-risk foods or traveling to areas where foodborne parasites are more common, they should seek medical evaluation. Early diagnosis and treatment can effectively manage many parasitic infections.

Healthy eating isn’t only about choosing nutritious foods—it’s also about preparing them safely. By understanding which foods require extra care and following established food safety recommendations, you can enjoy a varied diet while minimizing the risk of foodborne illness. A few simple precautions in the kitchen and when dining out can go a long way toward protecting your health.
