Parasites are organisms that can live in or on another organism and obtain nutrients from it. Some foodborne parasites can cause illness, but the good news is that proper cooking and safe food handling significantly reduce the risk.

Here are five popular foods to enjoy carefully.

1. Sushi and Raw Fish

Sushi is loved worldwide for its delicate flavors and variety. However, certain types of raw or undercooked fish can contain parasites, including Anisakis worms and, in some freshwater fish, tapeworm larvae.

Infected people may experience abdominal pain, nausea, vomiting, or digestive complications.

How to stay safe: Choose reputable establishments that follow appropriate parasite-control procedures. Proper commercial freezing can kill many parasites in fish intended to be eaten raw, although freezing does not eliminate every foodborne hazard.

2. Undercooked Pork

Pork is a staple in many cuisines, appearing in everything from grilled chops to traditional sausages.

However, raw or insufficiently cooked pork can transmit certain parasites, including Trichinella species and the pork tapeworm, Taenia solium, depending on the animal and region.

Infection can cause digestive symptoms, and some parasites can lead to serious complications.

How to stay safe: Cook pork thoroughly using a food thermometer and follow local food-safety guidance. Avoid eating raw pork or meat products prepared without adequate parasite-control measures.

3. Undercooked Beef

Steaks, burgers, and traditional raw beef dishes are popular in many countries. However, beef that is raw or inadequately cooked can carry Taenia saginata, the beef tapeworm.

Ground beef requires particular care because contamination on the surface of meat can be distributed throughout the product during grinding.

How to stay safe: Cook ground beef to an internal temperature of 71°C (160°F). For whole cuts of beef, follow recommended temperature and resting-time guidance.

4. Watercress and Other Raw Aquatic Plants

Fresh watercress and other aquatic vegetables can add flavor and nutrients to salads and traditional dishes.

However, plants grown in or exposed to contaminated freshwater may carry the larvae of Fasciola liver flukes. People can become infected by eating contaminated raw aquatic plants.

How to stay safe: Avoid eating wild aquatic plants collected from potentially contaminated water. Wash produce thoroughly under safe running water, while remembering that washing alone may not remove or kill all parasites.

5. Raw or Undercooked Freshwater Fish

Freshwater fish can be a source of foodborne parasites, including certain tapeworms and liver flukes. These infections are associated with eating infected fish that has not been adequately cooked or otherwise treated to kill parasites.

Some infections can cause digestive symptoms, while particular liver flukes can lead to serious long-term health complications.

How to stay safe: Cook freshwater fish thoroughly. Pickling, salting, marinating, or smoking fish does not necessarily kill parasites unless a validated process is used.

Absolutely. The goal is not to fear food, but to understand how foodborne infections occur and how to prevent them.

Remember these three essential precautions:

  • Cook food properly: Use a food thermometer where appropriate.
  • Choose safe sources: Buy meat and fish from reputable suppliers and restaurants that follow food-safety standards.
  • Handle produce and water safely: Wash produce with safe water and avoid untreated water or plants from contaminated sources.
