Most people remove salmon skin without thinking twice.

They peel it away, scrape it off the plate, and throw it straight into the garbage.

But that thin layer may contain more nutritional value than many people realize.

Salmon skin is edible when the fish has been properly sourced, stored, and cooked.

And for people who enjoy its texture, it can be one of the most flavorful parts of the fish.

The skin and fatty layer around it contain omega-3 fatty acids, the beneficial fats salmon is famous for.

Salmon also provides high-quality protein and important nutrients such as vitamin D, selenium, and several B vitamins.

That doesn’t mean the skin is some miracle food.

But throwing it away simply because it looks fatty may mean missing out on flavor and nutrients.

There is one important consideration.

Fish can be exposed to environmental contaminants, and some unwanted compounds may accumulate in fatty tissues.

That’s why the source of your salmon matters.

Buying fish from reputable suppliers and following local seafood-consumption guidance is particularly important for people who eat salmon frequently.

Preparation makes an enormous difference too.

Soft, soggy salmon skin isn’t particularly appealing to many people.

Crispy salmon skin is another story.

Start by drying the surface thoroughly.

Season it lightly, then place the salmon skin-side down in a properly heated pan.

Allow the skin to cook without constantly moving the fish.

As it crisps, the skin creates a flavorful outer layer while helping protect the tender salmon underneath.

The result can be dramatically different from the rubbery skin people remember removing from poorly prepared fish.

Of course, you don’t have to eat salmon skin to get the benefits of salmon.

The flesh itself remains highly nutritious.

But for most people who can safely eat salmon, properly prepared skin doesn’t automatically belong in the trash.

Sometimes the part of a food we’ve been conditioned to discard simply needs to be prepared differently.

And with salmon, that overlooked strip of skin might become the crispiest—and one of the most satisfying—bites on the plate.
